WHere is a simplified version of a cocktail from a new drinks list. Designed as a party-sized pre-mixed that is packed full of essence of the Christmas time, making it excellent for hosting a celebration. Save the extra cordial you can use for brunch beverages, puddings, or to make additional servings of the drink.
The Bikini Cocktail
Makes enough for 10 servings
To make the Citrus Syrup (produces 750ml)
300ml newly squeezed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Drink (makes 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
Making the Cordial: Place every items into a pan, bring to a simmer, agitating until the sugar dissolves. Next, turn off the heat allowing it to reach room temperature completely. Pour into a sealable bottle, close it and store in the fridge, it will last for around four weeks.
Preparing the Batch Mix: Combine all the liquids into one large bottle, allow it to infuse for one hour, then strain preferably using a fine cloth, so it's perfectly clear.
For serving: Pour 85ml of your batch mix to a cocktail shaker filled with ice, and agitate gently for one minute to cool it down. Strain into a cold coupe glass or a similar vessel, top with some cranberries and finish with a quick spritz of the essential oil over the drink.
